Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Mix until well combined and press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden, then remove from oven and let cool.

Make the filling
In a large bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add the remaining 3/4 cup of granulated sugar, sour cream, vanilla extract, and flour. Mix until just combined. Add the eggs one at a time, mixing on low speed after each addition until just blended.

Bake the cheesecake
Pour the cream cheese mixture over the cooled graham cracker crust. Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.

Cool and serve
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight. Before serving, top with your favorite fruit or sauce if desired.
