Prepare the Shrimp
In a mixing bowl, combine the tempura batter mix and water until smooth. Dip each shrimp into the batter to coat.

Fry the Shrimp
Heat the oil in a deep pan or fryer to 350°F (175°C). Fry the battered shrimp in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Make the Spicy Sriracha Mayo
In a small bowl, mix together the mayonnaise and sriracha until well combined. Adjust the spice level to taste.

Assemble the Po Boys
Toast the hoagie rolls lightly. Spread a generous amount of the spicy sriracha mayo on both sides of the rolls. Layer the mixed greens, pickled red cabbage, fried shrimp, cilantro, green onions, and sesame seeds inside the rolls.
