    Prepare the Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and bell peppers. Sauté until softened, about 5 minutes.

    Add Black Beans and Steak

    Stir in the black beans and cooked steak. Cook for an additional 2-3 minutes until heated through. Remove from the skillet and set aside.

    Whisk the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Omelette

    In the same skillet, add another tablespoon of olive oil and heat over medium-low heat. Pour in the egg mixture and let it cook undisturbed for 2-3 minutes until the edges start to set.

    Add Filling and Cheese

    Once the eggs are mostly set, spoon the steak and vegetable mixture onto one half of the omelette. Sprinkle the shredded pepper jack cheese over the filling.

    Fold and Serve

    Carefully fold the omelette in half and let it cook for another minute to melt the cheese. Slide onto a plate and serve hot, topped with pico de gallo.
