    Prepare the steak

    Thinly slice the ribeye steak against the grain and season it with salt and black pepper.

    Sauté the vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and green bell pepper, and sauté until they are softened and slightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.

    Cook the steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the sliced steak. Cook for about 3-5 minutes until the steak is browned and cooked through.

    Combine and melt cheese

    Add the sautéed onions and peppers back to the skillet with the steak. Place the slices of Swiss cheese on top, cover the skillet, and let it cook for another 2-3 minutes until the cheese is melted.

    Assemble the sandwiches

    Slice the sub rolls in half and fill each roll with the steak and cheese mixture. Serve hot.
