Prepare the Tater Tots
Preheat the oven according to the tater tots package instructions. Spread the frozen tater tots on a baking sheet and bake until golden and crispy, about 25-30 minutes.

Make the Chili
In a large pot, cook the ground beef over medium heat until browned. Drain excess fat. Add chopped onion and garlic to the pot, cooking until softened. Stir in chili powder, diced tomatoes, kidney beans, salt, and pepper. Let simmer for 20 minutes.

Prepare the Beer Cheese
In a saucepan over medium heat, combine cream cheese, shredded sharp cheddar, shredded pepper jack, and beer. Stir until melted and smooth. Add garlic powder and onion powder. Remove from heat.

Make Lime Sour Cream Sauce
In a small bowl, combine sour cream, lime juice, and lime zest. Mix well and set aside.

Assemble the Dish
On a large serving platter, layer the crispy tater tots. Top with chili, then drizzle the beer cheese over it. Add diced tomatoes, pickled jalapenos, and chopped bacon. Finish with cilantro, green onions, and a dollop of lime sour cream sauce.
