    Cook the Filling

    In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add diced onion and red bell pepper, cooking until softened, about 5 minutes. Remove from heat and stir in shredded pepper jack cheese until melted. Let mixture cool slightly.

    Assemble the Eggrolls

    Lay an egg roll wrapper on a clean surface with a corner pointing towards you. Place about 2 tablespoons of the beef mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a bit of water.

    Fry the Eggrolls

    In a deep skillet or pot, heat oil over medium-high heat until hot. Carefully place eggrolls in the oil, a few at a time, frying until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

    Serve warm with house-made beer cheese on the side.
