    Prepare the Ingredients

    Begin by cleaning and preparing the shrimp, spinach, and mushrooms. Pat the shrimp dry and season with salt and black pepper.

    Cook the Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms and sauté for about 3 minutes until they soften. Add the spinach and cook until wilted, about 2 minutes. Remove the vegetables from the skillet and set aside.

    Cook the Shrimp

    In the same skillet, add another tablespoon of olive oil. Add the seasoned shrimp and cook for 2-3 minutes on each side or until they turn pink and are cooked through. Remove from heat.

    Make the Omelette

    In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet over medium-low heat. Cook until the edges start to set, then gently lift the edges with a spatula to allow uncooked eggs to flow to the edges.

    Add Fillings

    Once the eggs are mostly set, add the sautéed vegetables and cooked shrimp evenly on one half of the omelette. Sprinkle the shredded swiss cheese on top.

    Fold and Cook

    Carefully fold the omelette in half over the fillings. Let it cook for another 1-2 minutes until the cheese melts and the eggs are fully cooked through.

    Serve

    Slide the omelette onto a plate and serve immediately with your choice of one side item (grits, potatoes, fruit, or toast).
