Prepare the Onions
Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and set aside.

Make the Batter
In a bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually add cold water until the batter is smooth and thick.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off. Carefully place the battered rings into the hot oil.

Fry the Rings
Fry the onion rings in batches until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Make the Special Sauce
In a small bowl, combine mayonnaise, ketchup, Dijon mustard, hot sauce, garlic powder, onion powder, and salt. Mix well until smooth.

Serve
Serve the hot onion rings with the special sauce on the side for dipping.
