    In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally. Once thickened, stir in butter, salt, and pepper to taste. Set aside.

    In a large skillet over medium heat, add the sliced country sausage. Cook until browned and cooked through, about 5-7 minutes. Add the shrimp and Old Bay seasoning, cooking until shrimp are pink and opaque, about 3-5 minutes.

    In a large serving dish, layer the cooked grits as the base. Top with the sausage and shrimp mixture. Sprinkle crumbled bacon, chopped scallions, and shredded cheddar cheese on top.
