    Prepare the Broccoli Rabe

    Trim the ends of the broccoli rabe and rinse under cold water. Blanch in boiling water for 2-3 minutes, then drain and shock in ice water to stop cooking.

    Roast the Garlic

    Peel the garlic cloves and add them to a small oven-safe dish. Drizzle with 1 tablespoon of olive oil, cover with foil, and roast in a preheated oven at 400°F (200°C) for 20 minutes until soft and fragrant.

    Combine Ingredients

    In a large skillet, heat the remaining olive oil over medium heat. Add the blanched broccoli rabe and sauté for about 5 minutes. Add the roasted garlic (squeezed from their skins), red chili flakes, salt, and black pepper, and cook for an additional 2-3 minutes until heated through.

    Serve

    Transfer the broccoli rabe to a serving dish and drizzle with any remaining olive oil. Serve warm.
