Prepare the Potatoes

Peel the Russet potatoes and cut them into quarters. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over high heat.

Cook the Potatoes

Once boiling, reduce heat to medium and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

Drain and Return to Pot

Drain the potatoes and return them to the pot. Allow them to steam for a few minutes to remove excess moisture.

Using a potato masher or a ricer, mash the potatoes until smooth.

Mix in the roasted garlic, chopped chives, and finely chopped sage. Stir well to combine.
