Cooking the Beef

Braise the Short Ribs

Preheat your oven to 300°F (150°C). Season the short ribs with salt and pepper. In a large oven-safe pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. Remove the ribs and set aside.

Sauté Vegetables

In the same pot, add onion, carrots, celery, and garlic. Sauté until they begin to soften, about 5-7 minutes.

Deglaze and Braise

Pour in the red wine and scrape up any browned bits from the bottom of the pot. Add the beef broth and demi-glace. Return the short ribs to the pot, cover, and transfer to the oven. Braise for 3 hours or until the meat is tender.

Assembling the Dish

Prepare the Toasted Bread

While the beef is cooking, toast the slices of house bread until golden brown.

Layer the Ingredients

Once the short ribs are done, shred the meat and place it on the toasted bread. Top with sliced Gruyère cheese, roasted red peppers, a dollop of whole grain mustard, and drizzle with some of the braising liquid.
