Cook the Pasta

In a large pot of salted boiling water, cook the fettucine noodles according to package instructions until al dente. Drain and set aside.

Sauté the Andouille Sausage

In a large skillet, heat the olive oil over medium heat. Add the sliced Andouille sausage and sauté until browned, about 5 minutes.

Add Aromatics

Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3 minutes.

Cook the Shrimp

Stir in the shrimp and creole seasoning. Cook until the shrimp are pink and opaque, about 3-4 minutes.

Combine Ingredients

Add the roasted poblano peppers and canned diced tomatoes (with their juice) to the skillet. Stir and cook for an additional 5 minutes to let the flavors meld.

Mix with Pasta

Toss the cooked fettucine noodles into the skillet, mixing well to coat the pasta with the sauce. Season with salt and black pepper to taste.

Serve

Garnish with fresh parsley before serving.
