Prepare the Short Ribs

Season the short ribs with salt and black pepper. In a large pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

Caramelize the Onions

In the same pot, add sliced onions and cook on medium heat until they are caramelized, about 10-15 minutes. Stir occasionally to avoid burning.

Deglaze with Red Wine

Add red wine to the pot, scraping the bottom to deglaze. Bring to a simmer and let it reduce by half.

Combine and Cook

Add the seared short ribs back to the pot along with demi-glace. Cover and simmer on low heat for about 2 hours, or until the ribs are tender.

Cook the Fettuccine

While the short ribs are cooking, boil a large pot of salted water. Add the fettuccine noodles and cook according to package instructions until al dente. Drain and set aside.

Finish the Sauce

Once the short ribs are tender, remove them from the pot. Stir in crème fraiche and mix well to combine. Adjust seasoning with salt and pepper if needed.

Serve

Plate the fettuccine noodles, top with the short rib sauce, and garnish with chopped fresh parsley. Serve with grilled focaccia on the side.
