    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

    Prepare the Pancetta

    While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat. Add the pancetta and cook until crispy, about 4-5 minutes. Remove from heat and set aside.

    Prepare the Sauce

    In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

    Combine Everything

    Once the spaghetti is cooked, reserve about 1 cup of the pasta cooking water, then drain the spaghetti. Immediately add the hot spaghetti to the skillet with the pancetta, and toss to combine.

    Add the Sauce

    Remove the skillet from heat and quickly pour the egg and cheese mixture over the spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water, a little at a time, until desired consistency is reached.

    Season with additional black pepper and salt to taste. Serve immediately with extra Parmesan cheese on top if desired.
