Gelato Base Preparation

Heat Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until it's just about to simmer, stirring occasionally to prevent scorching.

Whisk Egg Yolks and Sugar
In a bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Cool and Add Vanilla
Remove the saucepan from heat and let the mixture cool for about 10 minutes. Stir in the vanilla extract.

Chill the Mixture
Transfer the mixture to a bowl, cover, and refrigerate for at least 4 hours, or overnight for best results.
Flavoring the Gelato

Prepare Flavor
Choose your desired flavor: for chocolate gelato, whisk in cocoa powder; for strawberry gelato, fold in pureed strawberries; for pistachio gelato, mix in crushed pistachios; for coffee gelato, stir in cooled brewed coffee.

Churn the Gelato
Once the base is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the churned gelato to an airtight container and freeze for at least 4 hours to firm up.
