Calamari Preparation

Prepare Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to combine.

Coat Calamari
Dip each calamari ring into the wet mixture, then dredge in the flour mixture until well coated. Shake off any excess flour.

Heat Oil
Heat vegetable oil in a deep pot or fryer to 350°F (175°C).

Fry Calamari
Fry the calamari in batches for about 2-3 minutes, or until golden brown. Remove with a slotted spoon and drain on paper towels.

Sauté Garlic
Add minced garlic cloves and sauté for about 1-2 minutes, or until fragrant.

Combine Ingredients
Stir in the canned crushed tomatoes, oregano, salt, black pepper, and sugar. Bring to a simmer.

Simmer Sauce
Simmer the sauce for about 15-20 minutes, stirring occasionally, until it thickens slightly.

Add fresh basil leaves just before serving, and stir to combine.
