Prepare the Calamari
Rinse the cleaned calamari under cold water and pat them dry with paper towels. Cut them into rings if not already sliced.

Mix the Dry Ingredients
In a large bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well to ensure even distribution.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Dip each calamari ring into the egg mixture, allowing excess to drip off, then dredge them in the flour mixture until evenly coated.

Fry the Calamari
Carefully place the coated calamari in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Use a slotted spoon to remove the fried calamari from the oil and transfer them to a plate lined with paper towels to drain excess oil.

Add the Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15 minutes, stirring occasionally.

Finish the Sauce
Stir in the fresh basil just before serving. Adjust seasoning to taste.
