Chill and prepare bed

Fill a shallow serving platter with crushed ice in an even layer. Set aside in the refrigerator while you shuck and prepare other components so oysters remain cold.

Shuck oysters

Rinse oyster shells under cold water to remove grit. Using an oyster knife and a towel or glove, hold the oyster flat-side up. Insert knife at hinge, twist to pop, run knife under top shell to release, then slide knife beneath the oyster to detach from the bottom shell while keeping the liquor. Place each oyster on the bed of ice, liquor and all, arranged with hinge toward center for stability. Keep oysters refrigerated on ice until serving.

Warm bread

Preheat oven to 375°F (190°C). Lightly brush crusty bread slices with 1 tsp olive oil. Toast on a baking sheet 6–8 minutes until crisp and lightly golden. Keep warm or serve at room temperature alongside oysters.

Sauces & Condiments

Make mignonette

Combine 1/4 cup red wine vinegar with 1 tbsp minced shallot and 1/2 tsp freshly ground black pepper in a small bowl. Stir and let sit at least 10 minutes so shallot softens and flavors meld. Taste and adjust acidity or pepper as desired. Transfer to a small serving dish.

Make horseradish cocktail

In a second small bowl, whisk together 3 tbsp ketchup and 1 tbsp prepared horseradish. Taste and add more horseradish for heat or a squeeze of lemon if you prefer brighter acidity. Keep chilled until serving.

Sweet tomato relish

If using a prepared sweet tomato relish, transfer 1/4 cup to a small bowl. If making a quick version: finely dice one small ripe plum tomato (about 1/4 cup), toss with 1/2 tsp sugar, pinch of salt, and 1/2 tsp finely minced shallot; let sit 5–10 minutes. Serve chilled.

Atlantic Swordfish Sauce (drizzle)

Whisk together 2 tbsp extra-virgin olive oil, 1 tbsp fresh lemon juice, 1/2 tsp minced garlic, 1 tbsp chopped capers, 1 tbsp chopped parsley, 1/4 tsp fine sea salt, and 1/8 tsp black pepper in a small bowl. Taste and adjust salt or lemon. This bright, savory sauce echoes flavors often paired with swordfish and works as a delicate drizzle on each oyster if desired. Keep a spoon nearby for plating.

Lemon Hand-cut Beef Tartare

Prepare beef

Keep beef very cold (partially frozen for easier cutting). Using a sharp knife, trim any sinew and finely hand-cut the beef into small uniform dice (about 1/8 inch). Place in a chilled bowl.

Mix tartare

To the diced beef add 1 tbsp very finely minced shallot, 1 tbsp minced cornichons, 1 tsp chopped capers, 1 tsp chopped parsley, 1 tsp lemon zest, 1 tsp lemon juice, 1/2 tsp Dijon mustard, 1 tsp extra-virgin olive oil, 1/4 tsp fine sea salt and 1/8 tsp freshly ground black pepper. Gently fold until combined but not mushy — keep texture discernible. Taste and adjust lemon, salt or mustard. Refrigerate until ready to serve. Portion about 1/2 oz of tartare per oyster or serve a small mound (total ~6 oz) for sharing.

Assemble tartare garnish

If serving on oysters, use a small teaspoon to place a scant 1/2 teaspoon of tartare atop selected oysters just before serving (see plating). For a side portion, present the tartare on a small chilled plate with microgreens and crusty bread.

Finishing & Plating

Arrange the bed of ice with oysters on the serving platter. Place small bowls of mignonette, horseradish cocktail, sweet tomato relish, and the Atlantic swordfish sauce on the platter or separately so guests can choose.

For each oyster: if desired, spoon a few drops (about 1/2 tsp) of the Atlantic swordfish sauce across the oyster to add a bright briny herb note. Offer the mignonette, horseradish cocktail, and sweet tomato relish as alternatives. Add a tiny quenelle (about 1/2 tsp) of the lemon hand-cut beef tartare to 2–4 oysters or present the tartare on the side so guests can combine.

Garnish with microgreens or chopped chives scattered lightly over the platter and a few lemon wedges for squeezing. Serve immediately with toasted crusty bread on the side.
