Prepare lemons

Wash lemons thoroughly in warm water and dry. Using a microplane or sharp vegetable peeler, remove only the yellow zest from each lemon, avoiding the white pith (which imparts bitterness). Collect approximately the zests from 12 lemons.

Combine zest and alcohol

Place the lemon zest in a large, clean glass jar with an airtight lid (capacity about 2 liters). Pour 1.0 liter of high-proof neutral spirit (or vodka) over the zest, ensuring all zest is submerged. If using 95% ABV spirit, see note below about dilution later.

Macerate

Seal the jar and store in a cool, dark place. Let the mixture steep for 7–14 days, gently shaking the jar once a day for the first week to help extraction. Taste the infusion after 7 days — it should be strongly lemon-scented and bright. Continue to steep up to 14 days if you want a more intense citrus flavor; avoid longer to prevent excessive bitterness.

Strain infusion

When the desired intensity is reached, strain the infusion through a fine-mesh sieve lined with cheesecloth or a coffee filter into a clean pitcher or bowl. Press gently on the zests to extract remaining liquid, then discard zest solids. For a clearer final bottle, filter again through a coffee filter or fine paper filter.

Make syrup

Combine 700 g granulated sugar and 1.25 liters water in a saucepan. Warm gently over medium-low heat, stirring until sugar has completely dissolved. Do not boil. Once dissolved and the syrup is clear, remove from heat and let cool to room temperature (about 30–45 minutes).

Optional flavor addition

If using the optional vanilla bean, split it lengthwise and scrape the seeds into the warm syrup, then add the pod. Let the syrup cool with the vanilla to infuse a subtle rounded sweetness.

Proof/dilute (if needed)

If you used extremely high-proof spirit (e.g., 95% ABV) and wish to bring final ABV down, mix the 250 ml filtered water with the strained infusion before adding syrup. If you used 100–150 proof vodka, you may omit or reduce added water. The goal is a balanced final strength ~25–30% ABV (a typical limoncello range).

Combine infusion and syrup

Slowly add the cooled simple syrup to the strained lemon-alcohol infusion, stirring gently to combine. Taste and adjust: for brighter, more alcoholic limoncello use slightly less syrup; for sweeter, use a bit more syrup (you can add small increments until desired balance is reached).

Rest and clarify

Pour the combined limoncello into clean bottles, leaving a little headspace. Seal and refrigerate or store in a cool dark place for at least 3–7 days to let flavors marry and any fines settle. For the clearest result, chill and then decant through a coffee filter once more before final bottling.

Serve

Limoncello is traditionally served ice-cold. Chill bottles in the freezer and serve in chilled shot glasses or small liqueur glasses. Garnish with a thin lemon slice if desired.
