Gelato Base
Prepare vanilla
Split the vanilla bean lengthwise and scrape the seeds with the back of a knife. Put both seeds and the pod into a medium saucepan.
Warm milk and cream
Add whole milk, heavy cream, invert sugar (or light corn syrup), granulated sugar, and milk powder (if using) to the saucepan with the vanilla. Warm over medium heat, stirring occasionally, until the mixture is steaming and small bubbles form around the edge (do not boil), about 6–8 minutes. Remove from heat and let steep for 15 minutes to intensify vanilla flavor.
Temper egg yolks
While the milk steeps, whisk the egg yolks and fine sea salt in a medium bowl until smooth and slightly thickened. Slowly ladle about 1/2 cup of the warm milk mixture into the yolks while whisking constantly to temper them.
Cook custard
Pour the tempered yolks back into the saucepan with the remaining milk mixture. Return to low–medium heat and cook, stirring constantly with a heatproof spatula or wooden spoon and making sure to scrape the bottom, until the mixture coats the back of the spoon and reaches 170–175°F (77–80°C) — about 5–8 minutes. Do not let it boil.
Strain and cool
Remove from heat, strain the custard through a fine-mesh sieve into a clean bowl to remove the vanilla pod and any coagulated bits. Stir in the vanilla pod scrapings if desired. Cover the surface with plastic wrap to prevent a skin from forming and chill in the refrigerator until very cold, at least 3 hours or overnight.
Churn
Once the base is thoroughly chilled, give it a quick whisk, then freeze in an ice cream maker according to the manufacturer's instructions until it reaches a dense, soft‑serve gelato consistency (usually 20–30 minutes depending on your machine).
Espresso Swirl
Make espresso reduction
While the custard chills (or during churning), combine the freshly brewed espresso and granulated sugar in a small saucepan. Bring to a gentle simmer over medium heat and reduce by about half until syrupy, roughly 8–12 minutes. Watch carefully to avoid scorching. Remove from heat and let cool slightly.
Finish swirl sauce
Once the espresso reduction has cooled a bit, stir in the finely chopped dark chocolate and unsalted butter until melted and smooth. If using, stir in the espresso or coffee liqueur for extra depth. The result should be thick but pourable; if too thick when cold, warm gently to loosen.
Cool fully
Cool the espresso swirl to refrigerator temperature so it won't melt the gelato when layered (about 30–45 minutes). It should be slightly viscous to create ribbons rather than completely pourable syrup.
Assemble & Freeze
Drop spoonfuls of the cooled espresso swirl over the layer of gelato in several parallel lines. Continue layering another third of the gelato, more espresso swirl dollops, then the final gelato layer. Use a skewer or butter knife to make gentle figure‑eight swirls through the gelato to create attractive ribbons—avoid overmixing so ribbons remain distinct.
Cover tightly with plastic wrap or an airtight lid and freeze for at least 4 hours (ideally overnight) to firm up to scoopable gelato consistency.
Finish & Serve
If desired, warm the optional 2 tablespoons of cold brewed or strong espresso and drizzle sparingly over scoops for extra espresso punch just before serving.
Scoop gelato into chilled bowls or cups. Garnish with toasted almond slivers or chocolate shavings. Serve immediately.
