Make a simple syrup
Combine the granulated sugar and water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar fully dissolves. Remove from heat and allow to cool 5 minutes.
Infuse basil
Add the packed basil leaves to the warm simple syrup. Press them gently with the back of a spoon so they are submerged. Allow to steep for 15 minutes to extract aroma and flavor, then strain the syrup through a fine sieve, pressing on the leaves to capture the basil essence. Discard leaves and reserve syrup.
Prepare the raspberry purée
Place the fresh raspberries, lemon juice, lemon zest, and a pinch of salt in a blender or food processor. Add the reserved basil-infused syrup (measure about 3/4 to 1 cup depending on sweetness — use all if using full amount above). Purée until completely smooth, about 30 seconds.
Strain seeds
Push the raspberry purée through a fine-mesh sieve into a bowl using the back of a spoon or spatula to remove seeds. This yields a silky sorbet base. Taste and adjust: if too tart, add a tablespoon more syrup; if too sweet, add a teaspoon lemon juice.
Gelato-Style Texture (optional, for creaminess)
If you want a creamier, gelato-like sorbet, whisk the whole milk, corn syrup, and vanilla into the strained raspberry purée until smooth. The milk adds silkiness and the corn syrup reduces crystallization. Chill the combined mixture in the refrigerator until it is thoroughly cold (at least 1 hour, ideally 2 hours). If you prefer a dairy-free pure sorbet, skip this section and chill the fruit purée instead.
Churn & Freeze
Follow your ice cream maker's instructions: assemble and freeze the machine bowl if required. Pour the chilled raspberry mixture into the ice cream maker and churn until it reaches a soft-serve consistency, about 20–25 minutes depending on your machine.
Transfer the churned sorbet into a shallow airtight container. Smooth the top with a spatula. For a scoopable firm texture, press a piece of plastic wrap directly onto the surface to prevent ice crystals and freeze for at least 2–4 hours. For softer, gelato-like texture, freeze 1–2 hours.
Finish & Serving
Store leftover sorbet in an airtight container in the freezer for up to 2 weeks. To refresh after long storage, let sit at room temperature 8–10 minutes and stir briskly before serving to restore creaminess.
