Prepare and chill glass

Place a coupe or chilled rocks glass in the freezer for a few minutes or fill with ice water while you prepare the cocktail to chill it.

Combine ingredients

Add 1.5 oz Braulio amaro, 0.5 oz fresh lemon juice, 0.5 oz simple syrup, and 2 dashes of orange bitters to a cocktail shaker.

Add ice and shake

Fill the shaker with ice (about 1 cup or enough to nearly fill the shaker). Secure the lid and shake vigorously for 12–15 seconds until the shaker is cold to the touch and the mixture is well chilled and slightly diluted.

Strain

Dump the ice or water from your chilled glass. Double-strain the cocktail into the chilled coupe or a rocks glass over a large ice cube if you prefer it on the rocks, using a Hawthorne strainer and a fine-mesh (or julep) strainer to remove small ice shards and pulp.

Garnish

Express the citrus oils from a lemon twist (or orange twist) over the surface of the drink by holding the twist skin-side down about 3–4 inches above the cocktail and giving it a sharp fold to spray the oils. Run the twist around the rim if desired, then place it on the rim or float it on the surface as garnish.
