Chill glass
If desired, chill a large wine glass or rocks glass in the freezer for 5–10 minutes before making the drink to keep the cocktail cold longer.
Add ice
Fill the chilled glass generously with ice cubes until nearly full. Plenty of ice keeps the Prosecco from going flat too quickly.
Pour Aperol
Measure and pour 3 parts Aperol directly over the ice in the glass.
Add Prosecco
Slowly add 2 parts chilled Prosecco. Pour gently down the side of the glass or over the back of a spoon to preserve carbonation and create a layered look.
Top with soda
Add 1 part chilled soda water to the glass to lighten the drink and add a refreshing finish.
Stir gently
Give the cocktail one or two gentle stirrings with a long bar spoon to combine ingredients without knocking out too much fizz.
Garnish and serve
Garnish with an orange slice on the rim or floated in the glass. Serve immediately while cold and effervescent.
