    Prepare the Black Garlic Demi Glaze

    In a saucepan over medium heat, melt 1 tablespoon of butter and add the black garlic cloves. Cook for 2-3 minutes until fragrant. Add the red wine and beef stock, and simmer for about 15 minutes until reduced by half. Season with salt and pepper, then strain if desired.

    Caramelize the Onions

    In a skillet, heat the remaining tablespoon of butter and 1 tablespoon of olive oil over medium-low heat. Add the sliced onion, and cook slowly for about 20 minutes, stirring occasionally, until the onions are golden brown and caramelized.

    Sauté the Wild Mushrooms

    In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the wild mushrooms, season with salt, pepper, and thyme, and sauté for about 5-7 minutes until they are cooked and slightly browned.

    Cook the Filet Mignon

    Season the filet mignon with salt and black pepper. In a hot skillet, sear the filet for about 4-5 minutes on each side for medium-rare, or until your desired doneness is achieved.

    On a plate, place the filet mignon, top it with caramelized onions and sautéed wild mushrooms, and drizzle the black garlic demi glaze over the top. Serve immediately.
