Soup Preparation

Sauté the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until caramelized, about 30-40 minutes.

Add Wine and Broth

Once the onions are caramelized, add the minced garlic and cook for an additional 2 minutes. Pour in the white wine and scrape the bottom of the pot to deglaze. Add the beef broth, thyme, bay leaves, salt, and pepper. Bring to a simmer.

Simmer the Soup

Allow the soup to simmer for about 20 minutes to let the flavors meld together. Remove bay leaves before serving.

Prepare the Croutons

Preheat the oven to 375°F (190°C). Brush the French bread slices with olive oil and bake until golden and crispy, about 10-12 minutes.

Serve the Soup

Ladle the soup into oven-safe bowls. Top each bowl with a slice of toasted bread, then sprinkle with Havarti, Provolone, and Parmesan cheese. Broil in the oven until the cheese is melted and bubbly.

Garnish

Remove from oven and top with mesquite crispy onions before serving.
