Grilled Flat Iron Pork

Preparation and Cooking

    Prepare the Pork

    Pat the flat iron pork steaks dry with paper towels. Rub the olive oil, garlic powder, salt, and black pepper evenly over the steaks.

    Make the Glaze

    In a saucepan, combine smoked peaches, maple syrup, bourbon, apple cider vinegar, and cayenne pepper. Bring to a simmer over medium heat, then reduce the heat to low and cook for about 15 minutes until thickened. Stir occasionally.

    Grill the Pork

    Preheat the grill to medium-high heat. Grill the pork steaks for 5-7 minutes on each side or until they reach an internal temperature of 145°F (63°C).

    Apply the Glaze

    During the last few minutes of grilling, brush the smoked peach-maple bourbon glaze over the pork steaks. Allow it to caramelize slightly on the grill.

    Serve

    Remove the pork from the grill and let it rest for 5 minutes. Slice and serve with extra glaze on the side.
