Cooking Instructions
- 1
Prepare the Ingredients
Chop the onion and tomato, and drain the artichoke hearts. Rinse the spinach and set aside.
- 2
Sear the Salmon
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the salmon fillets with salt and black pepper. Once the oil is hot, add the salmon fillets, skin side down, and sear for about 4-5 minutes on each side or until cooked to your desired doneness. Remove from the skillet and set aside.
- 3
Sauté the Vegetables
In the same skillet, add the chopped onion and sauté until translucent. Then add the artichokes and sauté for an additional 2 minutes. Next, add the spinach and cook until wilted. Add the chopped tomato and squeeze the juice of the lemon over the mixture. Stir well and season with salt and black pepper.
- 4
Combine and Serve
Return the seared salmon to the skillet on top of the vegetable mixture. Drizzle with basil-oregano oil and let it heat through for a minute. Serve immediately.
