Preparation

    Prepare the Steak

    Season the steak with salt and pepper. Grill or pan-sear over medium-high heat for about 4-6 minutes per side or until desired doneness. Remove from heat and let it rest for 5 minutes.

    Sauté Onions

    In the same pan, add a little oil and sauté sliced onions until they are caramelized and golden brown, about 8-10 minutes.

    Make Avocado Chimichurri

    In a blender, combine avocado, cilantro, garlic, lime juice, salt, and pepper. Blend until smooth. Add a little water if needed to reach desired consistency.

    Assemble the Sandwich

    Slice the steak against the grain and layer it on the bottom half of the bun. Top with sautéed onions, smoked Gouda, potato crisps, and a generous drizzle of avocado chimichurri and Bistro pub sauce. Place the top half of the bun on top.

    Serve with Fries

    Serve the Pepito Steak Sandwich with a side of fries, if desired.
