Preheat the Oven
Preheat your oven to 220°C (428°F).

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half.

Season the Sprouts
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until well coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes or until they are blistered and golden brown, stirring halfway through.

Add Cashews and Sauce
In the last 5 minutes of roasting, add the cashews to the baking sheet. Once done, remove from oven and drizzle with Thai chili sauce.

Garnish and Serve
Toss the roasted Brussels sprouts and cashews with fresh mint leaves before serving.
