Make the Crust
Preheat the oven to 350°F (175°C). Crush the chocolate cookies into fine crumbs and mix with melted butter until well combined. Press the mixture into the bottom and up the sides of a mini pie pan or muffin tin to form a crust. Bake for 10 minutes, then remove from the oven and let cool completely.

Add the Filling
Once the crust has cooled, fill each crust with coffee ice cream, smoothing the top with a spatula or spoon. Place the mini pies in the freezer for at least 2 hours to set.

Add Toppings
After the ice cream has set, drizzle fudge sauce over each mini mud pie and sprinkle with coffee-chocolate Java Chips. Return to the freezer for an additional 30 minutes to firm up the toppings.

Remove the mini mud pies from the freezer about 10 minutes before serving to soften slightly. Enjoy your delicious mini mud pies!
