Prepare the Pesto

    Make the Basil-Walnut Pesto

    In a food processor, combine basil leaves, walnuts, garlic, Parmesan cheese, salt, and black pepper. Pulse until finely chopped. While the processor is running, gradually add olive oil until smooth. Taste and adjust seasoning if necessary.

Cook the Salmon

    Prepare and Cook Salmon

    Preheat the oven to 375°F (190°C). Season salmon fillets with lemon juice, salt, and black pepper. Place the fillets on a baking sheet lined with parchment paper. Spoon the prepared basil-walnut pesto generously over each fillet. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Make the Mashed Potatoes

    In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.
