    Melt Butter and Combine Ingredients

    In a medium saucepan, melt the unsalted butter over medium heat. Once melted, stir in the brown sugar until well combined.

    Mix Dry Ingredients

    In a small bowl, whisk together the cornstarch and salt. Gradually add this mixture to the butter and sugar mixture, stirring continuously.

    Add Milk and Cream

    Slowly pour in the milk, whisking constantly to avoid lumps. Bring the mixture to a simmer over medium heat, continuing to stir.

    Temper Egg Yolks

    In a separate bowl, whisk the egg yolks. Once the pudding mixture is simmering, slowly pour about a cup of the hot mixture into the egg yolks to temper them, whisking constantly.

    Combine and Thicken

    Pour the tempered egg yolk mixture back into the saucepan. Cook over medium heat, stirring constantly, until the pudding thickens (about 5-7 minutes). Remove from heat and stir in the vanilla extract.

    Cool and Chill

    Transfer the pudding to a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin from forming), and refrigerate for at least 2 hours or until set.

    Once the pudding is set, spoon it into serving dishes. Top with whipped cream, sprinkle with smoked Maldon salt, and serve immediately.
