    Prepare the Chimichurri Sauce

    In a food processor, combine parsley, oregano, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Blend until well combined and set aside.

    Prepare the Tri-tip

    Preheat your smoker to 225°F (107°C). Rub the tri-tip with olive oil, salt, and black pepper. Let it sit at room temperature for about 30 minutes.

    Smoke the Tri-tip

    Place the tri-tip in the smoker and cook for 2 to 3 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.

    Sear the Tomatoes

    While the tri-tip is smoking, heat a grill or skillet over medium-high heat. Cut the tomatoes in half and place them cut-side down on the grill. Sear for about 3-4 minutes until charred.

    Rest and Serve

    Once the tri-tip is done, remove it from the smoker and let it rest for 15 minutes. Slice against the grain and serve with seared tomatoes and chimichurri sauce.
