    Prepare the Pork Belly

    Preheat your smoker or grill to 225°F (107°C). Cut the pork belly into 1-inch cubes.

    Season the Meat

    In a bowl, mix kosher salt, black pepper, paprika, brown sugar, garlic powder, and onion powder. Rub the spice mixture all over the pork belly cubes.

    Smoke the Pork Belly

    Place the seasoned pork belly cubes into the smoker. Smoke for about 2 to 3 hours until they are tender and have a nice bark.

    Sauce and Wrap

    Remove the pork belly from the smoker and place it in an aluminum pan. Mix the BBQ sauce, apple cider vinegar, and honey together, then pour this mixture over the pork belly. Cover the pan tightly with foil.

    Finish Cooking

    Return the covered pan to the smoker and cook for an additional 1 to 1.5 hours.

    Remove the pan from the smoker, let the burnt ends rest for a few minutes, then serve warm.
