Prepare the Potatoes
Wash and peel the Russet potatoes, then cut them into fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the potatoes and dry them thoroughly with a kitchen towel. Fry the potatoes in batches until they are golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Assemble the Country Poutine
On a plate, place a generous serving of fried potatoes, top with warm country gravy, a fried egg, and sprinkle with Parmesan cheese.
