    Prepare the Pork

    Rub the pork shoulder with paprika, garlic powder, onion powder, salt, and black pepper. Let it sit for at least 30 minutes.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Smoke the pork shoulder for about 8 hours or until it reaches an internal temperature of 195°F (90°C).

    Make the BBQ Sauce

    In a bowl, mix together yellow mustard, apple cider vinegar, and brown sugar. Adjust seasoning to taste.

    In a large bowl, combine chopped kale and shredded carrots. Drizzle with olive oil and a pinch of salt. Toss to combine.
