Make the Biscuits
Preheat your oven to 450°F (232°C). In a large bowl, mix together the flour, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.

Shape the Biscuits
Turn the dough onto a floured surface and knead gently. Pat down to about 1-inch thickness and cut out biscuits with a biscuit cutter or a glass. Place them on a baking sheet.

Bake the biscuits for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

In a large skillet, cook the ground sausage over medium heat until browned. Drain excess fat if necessary. Stir in the flour and cook for 1-2 minutes.

Gradually whisk in the milk, stirring constantly until the mixture thickens. Season with black pepper and salt to taste.
