Prepare the Brine
In a large pot, combine water, apple cider vinegar, kosher salt, and brown sugar. Heat over medium heat, stirring until the salt and sugar dissolve. Remove from heat and let cool.

Add Aromatics
Once the brine is cool, add the whole black peppercorns, dried thyme, smashed garlic cloves, and bay leaves.

Brine the Chicken
Place the chicken in a large container or resealable bag. Pour the brine over the chicken, ensuring it is fully submerged. Seal the container or bag and refrigerate for at least 4 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Remove and Dry Chicken
After brining, remove the chicken from the brine and pat it dry with paper towels.

Roast the Chicken
Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour for a half chicken or 1.5 hours for a full chicken, or until the internal temperature reaches 165°F (74°C).

Let the chicken rest for 10-15 minutes before carving. Serve and enjoy!
