Preparation

    Prepare Strawberries

    Wash the fresh strawberries thoroughly under running water. Remove the stems and cut them in half.

    Make Strawberry Puree

    In a blender, combine the halved strawberries with 1/2 cup of water and blend until smooth. Strain the mixture through a fine sieve into a bowl to remove seeds, if desired.

    Mix Lime Juice and Sugar

    In a separate large bowl, combine the fresh lime juice and granulated sugar. Stir well until the sugar is completely dissolved.

    Combine Ingredients

    Add the strawberry puree to the lime juice and sugar mixture. Pour in the remaining 3.5 cups of water and mix until well combined.

Freezing

    Pour Mixture into Molds

    Pour the combined mixture into popsicle molds, filling each mold about 3/4 full to allow for expansion.

    Insert Sticks

    If your molds come with sticks, insert them into the center of each mold. If using wooden sticks, wait about 30 minutes until the mixture starts to freeze slightly before inserting.

    Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

Serving

    Remove Popsicles from Molds

    To remove the popsicles, run warm water over the outside of the molds for a few seconds to loosen them.

    Serve the popsicles on a plate or in a cup. Garnish with lime slices and fresh mint leaves as desired.
