Method

Brewing the Kombucha

    Prepare the Tea

    In a large pot, bring 8 cups of water to a boil. Once boiling, remove from heat and add 4 organic black tea bags. Let steep for 15 minutes.

    After removing the tea bags, stir in 1 cup of granulated sugar until fully dissolved. Allow the mixture to cool to room temperature.

    Combine with Starter Tea

    Once cooled, pour the sweetened tea into a fermentation vessel. Add 1 cup of starter tea to the mixture.

    Add the SCOBY

    Gently place the SCOBY into the fermentation vessel. Cover the opening with a clean cloth or coffee filter secured with a rubber band to allow airflow while preventing contaminants.

Fermentation Process

    Primary Fermentation

    Allow the kombucha to ferment at room temperature (ideally 70-85°F or 21-29°C) for 7-14 days. Taste it periodically until it reaches your desired flavor profile.

Flavoring and Bottling

    Add Flavorings

    Once the primary fermentation is complete, remove the SCOBY and set it aside in a clean container with some of the kombucha. Add 1 cup of passionfruit puree and 1 cup of tangerine juice to the fermented tea. Stir well to combine.

    Prepare for Secondary Fermentation

    Pour the flavored kombucha into bottles, leaving some space at the top. Add 1 tablespoon of sugar to each bottle to encourage carbonation.

    Seal and Ferment Again

    Seal the bottles tightly and leave them at room temperature for 3-7 days to carbonate. Be sure to check the carbonation level by opening a bottle daily.
