Prepare Spinach
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add Spinach
Add the fresh spinach to the skillet and sauté for 3-4 minutes until the spinach is wilted. Season with salt and black pepper.

Mix Eggs and Feta
In a bowl, whisk together the eggs. Crumble feta cheese into the eggs and mix well.

Finish Cooking
If desired, you can finish cooking the frittata under a broiler for 2-3 minutes until the top is set and slightly golden.

Allow the frittata to cool slightly, then slice into wedges and serve warm.

In a large mixing bowl, combine mixed greens, halved cherry tomatoes, and diced cucumber.
