Bisque Base

Method

Prepare the Bisque

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-5 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Add Vegetables

    Add the diced carrots and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

    Incorporate Tomatoes and Broth

    Stir in the canned diced tomatoes (with their juices) and the vegetable broth. Bring the mixture to a simmer and let it cook for about 15-20 minutes.

    Blend the Base

    Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth.

    Add Cream and Seasonings

    Return the soup to the pot if using a blender. Stir in the heavy cream, red pepper flakes, salt, and black pepper. Adjust seasoning to taste and let it simmer for another 5 minutes.

Prepare the Garnish

    Grate Cheese and Chop Herbs

    While the bisque is simmering, grate the Pecorino Romano cheese and chop the fresh herbs.

    Toast the slices of naturally leavened bread until golden brown. You can do this in a toaster or on a skillet.

    Ladle the hot spicy tomato bisque into bowls. Top each bowl with a generous sprinkle of grated Pecorino Romano and a handful of fresh herbs.
