Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, mix the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Combine Ingredients

In a large mixing bowl, combine the bread flour and salt. Once the yeast is activated, add the sourdough starter and yeast mixture to the flour. Mix until a shaggy dough forms.

  3. 3

    Knead Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.

  4. 4

    First Rise

Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.

Shaping & Boiling

  1. 5

    Shape the Pretzels

Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches) and then shape it into a pretzel.

  2. 6

    Prepare Baking Soda Bath

In a large pot, bring the water to a boil and add the baking soda. Reduce the heat to a simmer.

  3. 7

    Boil Pretzels

Carefully place each shaped pretzel into the baking soda bath for about 30 seconds. Remove and place on a baking sheet lined with parchment paper.

Baking

  1. 8

    Preheat Oven

Preheat your oven to 220°C (425°F).

  2. 9

    Add Toppings

Brush each pretzel with melted butter and sprinkle with coarse sea salt.

  3. 10

    Bake

Bake the pretzels in the preheated oven for about 12-15 minutes or until golden brown.

  4. 11

    Cool and Serve

Remove from the oven and let cool for a few minutes on a wire rack before serving.
