Salad Preparation

Roast the Apples
Preheat the oven to 400°F (200°C). Core and slice the red delicious apples into wedges. Place them on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20 minutes or until the apples are tender and slightly caramelized. Remove from the oven and let cool slightly.

Prepare the Salad Base
In a large salad bowl, combine the mixed local greens and fresh spinach. Thinly slice the red onion and add it to the salad bowl. Crumble the Grafton aged cheddar cheese and sprinkle over the greens.

Add Apples and Pecans
Once the roasted apples have cooled, add them to the salad bowl along with the candied pecans. Toss gently to combine all the ingredients.
Maple Vinaigrette Preparation

Make the Vinaigrette
In a small bowl, whisk together the maple syrup, olive oil, apple cider vinegar, and Dijon mustard until well blended. Season with salt and black pepper to taste.

Drizzle the maple vinaigrette over the salad and toss gently to coat all the ingredients evenly.
