Prepare the Roast Beef

Season the Beef
Preheat your oven to 325°F (165°C). Rub the beef roast with olive oil, then season generously with salt, black pepper, garlic powder, and onion powder.

Roast the Beef
Place the seasoned beef roast on a roasting rack in a roasting pan. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Let it rest for 15 minutes before slicing thinly.
Make the Boursin Horseradish Spread

Mix the Spread
In a small bowl, combine the Boursin cheese, horseradish sauce, and lemon juice. Mix until well combined and creamy.
Assemble the Sandwich

Prepare the Ingredients
Slice the ciabatta rolls in half. Thinly slice the red onion.

Spread and Layer
Spread a generous amount of the Boursin horseradish spread on one side of each ciabatta roll. Layer with sliced roast beef, provolone cheese, arugula, and red onion. Close the sandwich.

In a large bowl, toss mixed greens with olive oil and balsamic vinegar. Season with salt and pepper to taste.
