Frittata Preparation

Prepare the Ingredients
Chop the Canadian bacon into small pieces and set aside. Slice the onion thinly and chop the fresh thyme leaves.

Caramelize the Onions
In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook, stirring frequently, for about 10-12 minutes until they are golden brown and caramelized.

Prepare the Egg Mixture
In a mixing bowl, whisk the eggs, salt, and black pepper until well combined.

Add Gruyere and Bake
Sprinkle the grated Gruyere cheese over the top of the frittata. Transfer the skillet to a preheated oven at 180°C (350°F) and bake for 15-20 minutes or until the frittata is set and the top is slightly golden.

In a large bowl, combine the mixed greens, halved cherry tomatoes, and sliced cucumber.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper. Drizzle the dressing over the salad and toss gently to combine.
