Preheat the Oven
Preheat your oven to 425°F (220°C). This will ensure that your fries cook evenly and become crispy.

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into 1/4-inch thick strips to create fry shapes.

Season the Potatoes
In a large bowl, combine the cut potatoes with olive oil, salt, and black pepper. Toss to coat the potatoes evenly.

Arrange on Baking Sheet
Spread the seasoned potato strips in a single layer on a baking sheet lined with parchment paper to prevent sticking.

Bake the Fries
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

Add Seasoning
Once the fries are done baking, remove them from the oven and immediately sprinkle with BTB spice rub or truffle salt, and grated Parmesan cheese. Toss to combine.
