Preparation of Kombucha

    Boil Water and Dissolve Sugar

    In a large pot, bring 4 cups of water to a boil. Once boiling, add 1 cup of sugar and stir until fully dissolved.

    Add 4 tablespoons of black tea leaves to the boiling water. Remove from heat and let steep for about 15 minutes.

    After steeping, remove the tea leaves and allow the mixture to cool to room temperature.

    Once cool, pour the tea mixture into a clean glass jar or fermentation vessel. Add 1 cup of kombucha starter tea.

    Gently place the SCOBY on top of the mixture. Cover the jar with a clean cloth and secure it with a rubber band.

    Ferment the Kombucha

    Let the kombucha ferment at room temperature (around 70-85°F or 21-29°C) for 7-14 days, depending on your taste preference.

Flavoring and Second Fermentation

    While the kombucha is fermenting, wash and slice 2 medium Pink Lady apples. Peel and slice 1 tablespoon of fresh ginger.

    Once the primary fermentation is complete, remove the SCOBY and reserve 1 cup of kombucha for your next batch. Add the sliced apples, ginger, and 1 cinnamon stick to the remaining kombucha. Stir in 2 tablespoons of sugar for the second fermentation.

    Bottle the Kombucha

    Using a funnel, pour the flavored kombucha into bottles, leaving about an inch of headspace at the top.

    Seal the bottles tightly and let them ferment at room temperature for an additional 3-7 days to develop carbonation.
