Base Kombucha

Method

Base Kombucha Preparation

  1. 1

    Prepare the Tea Base

Boil 4 cups of water in a saucepan. Once boiling, remove from heat and add 1 cup of sugar, stirring until dissolved. Add 4 black tea bags and steep for 10-15 minutes.

  2. 2

    Cool the Tea Base

Remove the tea bags and let the sweetened tea cool to room temperature.

  3. 3

    Combine with Starter Tea

In a large glass jar, combine the cooled tea with 1 cup of starter tea. Make sure the jar is clean and sanitized.

  4. 4

    Add the SCOBY

Gently place the SCOBY into the jar. Cover the top with a clean cloth and secure it with a rubber band, allowing air to flow but keeping contaminants out.

  5. 5

    Ferment

Let the kombucha ferment at room temperature (around 70-85°F) for 7-14 days, depending on your taste preference. Taste it periodically after the first week.

Berry Lemonade Flavoring

  1. 6

    Prepare the Berry Lemonade

Juice the 3 whole fresh lemons into a bowl. In a blender, combine the mixed berries and honey or agave syrup, and blend until smooth.

  2. 7

    Strain the Berry Mixture

Strain the berry mixture through a fine mesh sieve to remove seeds and pulp, collecting the juice in a separate bowl.

  3. 8

    Combine Flavors

Mix the lemon juice with the strained berry juice until well combined.

  4. 9

    Flavor the Kombucha

Once the kombucha has fermented to your liking, remove the SCOBY and reserve it for the next batch. Add the berry lemonade mixture to the kombucha and stir gently.

  5. 10

    Bottling

Pour the flavored kombucha into clean bottles, leaving some space at the top. Seal the bottles and let them sit for another 3-7 days to carbonate.
